Isaly’s Chipped Ham Jambalaya


16 oz. Isaly’s Ham, medium dice
¾ cup Onion, medium dice
¾ cup Green pepper, medium dice
¼ cup Celery, medium dice
2 Tbsp. Garlic, minced
28 oz . 1 can Diced Tomatoes, undrained
¾ cup Canned Chicken stock
1 tsp. Paprika
½ tsp. Dried Oregano
1.2 tsp. Dried Thyme
½ tsp. Dried Basil
½ tsp. Cracked Black pepper
2-3 tsp. Hot sauce
1 Bay leaf
1 cup Rice


In a large saucepan sauté the ham lightly in 1 to 2 Tbsp. of oil
Add the vegetables and garlic, and sauté till slightly tender.
Add the tomatoes, stock, herbs, spices and rice, and bring to a simmer.
Cover with a tightly fitting lid and place in a preheated 350 degree oven for 20 to 25 minutes or till the rice is tender, and most of the liquid is absorbed.
