Fran’s Chipped Chopped Ham, Rice & Spinach Casserole

½ lb. Isaly’s Chipped Chopped Ham
1 cup rice
1 box frozen chopped spinach
½ cup cream of celery or mushroom soup
½ cup water
2 tbsp. chopped onion
1 small garlic clove, finely chopped
Butter or margarine
Olive oil
¼ tsp. salt
¼ tsp. black pepper (add a few shakes of cayenne pepper if you like)
¼ tsp. Italian seasoning
1 cup bread crumbs


– Gently pull apart or slice chipped ham into smaller 1 ½” pieces; mound them
– Cook and drain rice
– Cook and drain spinach
– Spoon rice into large bowl and fold in spinach
– Pour soup into smaller bowl and blend with ½ cup water
– Mix with rice and spinach
– Saute chopped onion and garlic in butter and olive oil until soft; spread over
rice mixture
– Add salt, pepper and seasoning and blend well
– Spoon mixture into buttered 9 ½” square or oval casserole
– Add clumps of Isaly’s Chipped Ham and pat down into rice mixture with back of spoon
– (“Don’t mix through. This gives it a wonderful texture.”)
– In a small skillet, saute bread crumbs in butter and olive oil, stirring until golden and slightly crunchy
– Top casserole mix with crumbs and pat down
– Bake in 300 degree oven, uncovered, for about 25 minutes

Serves 8 to 10
